Ingredients

BROWNIE LAYER

  • 1 ½ cups (187.5 g) all-purpose flour
  • 1 tablespoon cornstarch
  • ⅓ cup (39 g) Dutch-processed cocoa powder
  • ½ teaspoon baking powder
  • ¼ teaspoon kosher salt
  • 4 large eggs, room temperature
  • 2 cups (400 g) granulated sugar
  • ¾ cup (1 ½ sticks / 170 g) unsalted butter
  • 2 teaspoons vanilla extract

MOUSSE LAYER

  • 1 ½ cups (357 g) heavy whipping cream, cold, divided
  • 1 cup chocolate chips, semi-sweet (or your preference)
  • chocolate curls, for garnish (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F. Line a 9×13-inch baking dish with parchment paper.
  2. BROWNIE LAYER: Whisk dry ingredients. Mix wet ingredients, then combine and bake.
  3. MOUSSE: Melt chocolate with cream, whip remaining cream, fold in chocolate, and spread over brownies. Chill before serving.
