Chocolate Jam Bites are a healthy and delicious treat that combines the richness of dark chocolate with the tartness of raspberry chia jam, perfect for satisfying your sweet tooth in a guilt-free way.

Ingredients

1 heaping cup raspberries

1 tablespoon chia seeds

1 tablespoon maple syrup or honey

1 cup dark chocolate chips or chunks

1 teaspoon coconut oil

Instructions

  1. Line a baking sheet with parchment paper and set aside. Make sure you have enough room in your freezer for the sheet.
  2. In a bowl, mash the raspberries using a fork. Mix in the chia seeds and maple syrup, and stir until combined. Allow the mixture to sit for 5-10 minutes to thicken.
  3. Scoop about 2 tablespoons of the chia jam mixture onto the prepared baking sheet, leaving about 2 inches between each dollop. Place the baking sheet in the freezer for about an hour or until the jam clusters are solid.
  4. In a medium bowl, melt the dark chocolate chips and coconut oil in the microwave in 30-second increments. Stir in between to avoid burning.
  5. Once the chocolate is smooth, work quickly to dip each frozen jam cluster into the chocolate, ensuring a good coating. Return them to the baking sheet and top with a sprinkle of sea salt.
  6. Put the chocolate-covered bites back into the freezer for 10 minutes or until the chocolate has fully set.

Notes

  • These bites can last up to two weeks in the freezer when stored in an airtight container.
  • Frozen raspberries can be used if fresh ones aren’t available.
  • For a lighter version, skip the chocolate coating and enjoy just the raspberry chia jam clusters.
  • If you prefer a sweeter treat, milk chocolate can be used instead of dark chocolate.
  • Sea salt is optional, but it enhances the flavor.
