Ingredients

Brownie Base

Chocolate Ganache

  • 1½ cups Semi Sweet Chocolate Chips (or use part dark chocolate)
  • ¾ cup Heavy Cream (up to 1 cup if more is needed)

Instructions

  1. Prepare the Brownies: In an 8″x8″ baking dish, prepare the brownies according to the package directions. Once baked, allow them to cool completely to ensure the ganache sets properly.
  2. Prepare Strawberries: Remove the stems from the strawberries and slice each berry in half lengthwise, ensuring even layering later on.
  3. Arrange Strawberries: Place the halved strawberries in a single layer over the cooled brownie base, positioning them with the cut (seed) side up for an attractive presentation.
  4. Make the Chocolate Ganache: In a microwave-safe bowl, combine the semi-sweet chocolate chips and heavy cream. Microwave on high for 25 seconds, then stir slowly to encourage melting.
  5. Continue Melting and Stirring: Microwave the mixture again for 20 seconds, then stir thoroughly for at least 20 seconds. The ongoing stirring helps melt the chocolate evenly without overheating.
  6. Achieve Smooth Ganache: If chocolate chips remain chunky, microwave for an additional 15 seconds and stir again. Repeat this process until the ganache is smooth, glossy, and dark in color.
  7. Pour Ganache: Evenly pour the finished ganache over the strawberry layer, making sure all berries are covered.
  8. Chill to Set: Refrigerate the assembled brownies for 20 to 30 minutes until the ganache firms up. It won’t harden completely but will become set enough to slice.
  9. Serve: Slice and serve within a day, as the moisture from the strawberries will make the brownies soggy if stored longer.
