Ingredients

Strawberries

  • 2 pounds fresh strawberries with stems attached (900g)

Chocolate

  • 12 ounces dark chocolate (or bittersweet, semi-sweet, milk chocolate) (340g)
  • 10 ounces white chocolate or white candy melts (284g)

Instructions

  1. Prepare the strawberries: Wash your strawberries thoroughly and carefully pat them dry with a towel to remove any moisture. It’s important they are completely dry to ensure the chocolate adheres properly.
  2. Melt the chocolate: Using a double boiler method, place each type of chocolate in separate heat-proof bowls and set them over simmering water, stirring occasionally until smooth and fully melted. Alternatively, you may melt the chocolate in the microwave at 50% power in 30-second bursts, stirring between each interval.
  3. Dip the strawberries: Hold each strawberry by the stem and dip it into the melted dark chocolate, allowing excess chocolate to drip off. Place the dipped strawberries on parchment paper for the chocolate to set. If desired, sprinkle toppings onto the wet chocolate now for added texture or flavor.
  4. Decorate with contrasting chocolate: To create decorative stripes, fill a piping bag with the melted white chocolate, snip off the tip, and drizzle it over the dipped strawberries for a beautiful contrast and design.
  5. Set the chocolate: Allow the dipped strawberries to sit at room temperature until the chocolate hardens, or speed up the process by placing them in the refrigerator for about 15 minutes until firm.
