Ingredients

Mint Filling:

  • 1/3 cup light corn syrup
  • 5 tablespoons butter, softened
  • 1 1/2 teaspoons mint extract
  • 1/2 teaspoon salt
  • Green food coloring (start with a couple drops)
  • 45 cups powdered sugar

Chocolate Coating:

  • 10 oz chocolate candy coating (such as CandiQuik)

Instructions

  1. Prepare Mint Filling: In a medium bowl, mix together corn syrup, softened butter, mint extract, salt, and green food coloring until well combined.
  2. Add Powdered Sugar: Gradually stir in powdered sugar, 1 cup at a time, until the mixture becomes stiff.
  3. Knead the Mixture: Continue adding powdered sugar and kneading the mixture until it no longer sticks to your hands.
  4. Form Patties: Roll the mixture into 1-inch balls, flatten them, and place them on waxed paper-lined trays.
  5. Chill: Cover with another sheet of waxed paper and refrigerate for 60-90 minutes until firm.
  6. Coat with Chocolate: Melt chocolate candy coating as per package instructions. Dip the patties in chocolate, tap off excess, and place back on waxed paper.
  7. Set and Store: Allow the chocolate to set before storing the candies in an airtight container. For longer storage, freeze the patties separated by waxed paper.
