This easy Chipotle Corn Salsa is a fresh, flavorful side dish or topping that combines lightly sautéed sweet corn with zesty lime juice, spicy jalapenos, crisp red onion, and fresh cilantro. Perfect for parties or a quick snack, this salsa can be made ahead to let the flavors meld beautifully.

Ingredients

Ingredients

  • 16 ounces frozen sweet corn, white or yellow
  • ½ medium red onion, diced
  • 2 fresh jalapenos, seeds and membrane removed, diced
  • ⅓ cup finely chopped fresh cilantro
  • ¼ cup fresh lime juice (optionally add a squeeze of lemon)
  • ¼ teaspoon fine sea salt (adjust to taste)

Instructions

  1. Saute frozen corn: Heat a large sauté pan over medium heat. Add the frozen sweet corn and cook for about 4 minutes, stirring occasionally, until the corn is heated through. This step ensures food safety and brings out the sweetness of the corn.
  2. Cool corn: Spread the cooked corn out on a large baking sheet to allow it to cool to room temperature. This prevents the salsa from becoming watery and helps maintain crisp texture.
  3. Combine ingredients: In a mixing bowl, toss together the cooled corn, diced red onion, and diced jalapenos. Pour in the fresh lime juice and season the mixture with fine sea salt. Finally, gently fold in the chopped fresh cilantro to evenly distribute the flavors.
  4. Chill and serve: For best flavor, refrigerate the salsa for 20–30 minutes before serving. This resting time allows the flavors to meld and intensify. Adjust salt to taste prior to serving. This salsa is excellent for prepping in advance and can easily be doubled or tripled for larger gatherings.
