Ingredients

Zucchini Noodles:

  • 4 zucchinis/courgettes, cut into noodles

  • 2 tablespoons tahini or peanut/almond butter
  • 1 tablespoon sesame oil
  • 23 teaspoons medium or mild chili powder (to taste)
  • 2 teaspoons chili oil
  • 2 teaspoons honey or maple syrup (optional)

Optional Garnishes:

  • Toasted sesame seeds
  • Green onions

Instructions

  1. Make Zoodles: Cut zucchinis into noodle shapes. Toss with salt and let sit for 30 mins.
  2. Prepare Sauce: Mix garlic, coconut aminos, tahini, sesame oil, chili powder, chili oil, and honey/maple syrup.
  3. Combine: Squeeze excess moisture from zoodles and mix with sauce.
  4. Serve: Garnish with sesame seeds and green onions before serving.
