Ingredients

Potatoes

  • 5 small/medium potatoes, peeled and cubed
  • Olive oil, for tossing
  • Salt, to taste
  • Black pepper, to taste
  • Garlic powder, to taste
  • Paprika, to taste

Chili Beef Mixture

  • 1 lb ground beef
  • 1 onion, chopped
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp paprika
  • 2 tsp chili powder
  • 1 tbsp minced garlic
  • 10 oz can diced tomatoes and green chiles, drained
  • 15.5 oz can chili beans, drained

Toppings

  • 1 1/2 cups shredded cheddar cheese
  • 2 green onions, chopped
  • Sour cream, for serving
  • Jalapeños, for serving

Instructions

  1. Prep the Potatoes: Peel, wash, and cut the potatoes into cubes. Toss them with olive oil, salt, pepper, garlic powder, and paprika to evenly coat them.
  2. Air Fry the Potatoes: Place the seasoned potato cubes in the air fryer basket. Cook at 400°F for about 25 minutes, shaking the basket a couple of times during cooking to ensure even crisping.
  3. Cook the Ground Beef: While the potatoes are cooking, heat a large skillet over medium-high heat. Add the ground beef and chopped onion, then season with salt, pepper, onion powder, paprika, and chili powder. Brown the beef and onion together, stirring to combine thoroughly. Drain any excess grease once cooked through.
  4. Add Garlic, Tomatoes, and Beans: Stir in the minced garlic, drained diced tomatoes and green chiles, and drained chili beans into the cooked beef mixture. Let it simmer on the stove for a few minutes to blend flavors while the potatoes finish cooking.
  5. Combine Potatoes and Beef Mixture: Once the potatoes are crispy and done, add them to the skillet with the beef mixture. Stir gently to combine everything evenly.
  6. Top with Cheese and Melt: Sprinkle the shredded cheddar cheese over the potato and beef mixture in the skillet. Place the skillet in a preheated oven at 400°F for a few minutes, just until the cheese melts.
