Chicken salad is a classic, versatile dish that combines tender cooked chicken with crisp vegetables, creamy dressing, and a touch of seasoning. Perfect as a light meal, sandwich filling, or side dish.

Ingredients

2 cups cooked chicken, shredded or diced

2 stalks celery, finely chopped

1/4 cup red onion, finely chopped

1/2 cup mayonnaise

1 tbsp Dijon mustard

1 tbsp lemon juice

Salt and pepper to taste

Optional: 1/2 cup grapes or dried cranberries

Optional: 1/4 cup chopped nuts (walnuts or pecans)

Optional: 2 tbsp chopped fresh herbs (parsley or dill)

Instructions

  1. In a large bowl, combine the cooked chicken, celery, and red onion.
  2. In a separate small bowl, whisk together mayonnaise, Dijon mustard, and lemon juice until smooth.
  3. Pour the dressing over the chicken mixture and stir until evenly coated.
  4. Season with salt and pepper to taste.
  5. If desired, gently fold in grapes, nuts, or fresh herbs.
  6. Chill in the refrigerator for at least 30 minutes before serving to let the flavors meld.
