Ingredients

Chicken Salad:

  • 2 ½ cups chicken (chopped or shredded)
  • 1/2 cup diced celery
  • 1/2 cup red seedless grapes, quartered or halved
  • 1/4 cup sliced almonds (or chopped pecans)
  • 1/4 cup light mayo
  • 1/4 cup non-fat Greek yogurt
  • 1 tbsp dried minced/chopped onion
  • 2 tsp apple cider vinegar
  • 1/4 tsp celery salt
  • 1 tsp honey

Instructions

  1. Toast almonds: In a nonstick pan over medium heat, toast sliced almonds until fragrant and light golden brown.
  2. Prepare the dressing: In a bowl, combine mayo, Greek yogurt, honey, dried minced onion, celery salt, apple cider vinegar, and honey. Add chicken, celery, grapes, and almonds. Mix well.
  3. Chill: Cover and refrigerate the salad for at least 25 minutes to let the flavors meld together.
