Chicken Salad:
2 ½ cups chicken (chopped or shredded)
1/2 cup diced celery
1/2 cup red seedless grapes, quartered or halved
1/4 cup sliced almonds (or chopped pecans)
1/4 cup light mayo
1/4 cup non-fat Greek yogurt
1 tbsp dried minced/chopped onion
2 tsp apple cider vinegar
1/4 tsp celery salt
1 tsp honey
Instructions
Toast almonds: In a nonstick pan over medium heat, toast sliced almonds until fragrant and light golden brown.
Prepare the dressing: In a bowl, combine mayo, Greek yogurt, honey, dried minced onion, celery salt, apple cider vinegar, and honey. Add chicken, celery, grapes, and almonds. Mix well.
