Indulge in the ultimate creamy chicken Alfredo with sun-dried tomatoes and spinach, topped with crumbled beef, a luxurious and comforting dish you’ll crave!

Ingredients

Fettuccine:

  • 300g / 10 oz fettuccine

Chicken:

  • 2 chicken breasts
  • 1/2 tsp salt
  • 1/2 tsp pepper

Alfredo Sauce:

  • 30g / 2 tbsp butter
  • 2 garlic cloves
  • 1/2 cup dry white wine
  • 1/2 cup chicken stock
  • 1 1/4 cups cream
  • 3/4 cup parmesan
  • 70g sun-dried tomato strips
  • 100g baby spinach

Serving:

  • 120g cooked, crumbled beef
  • More parmesan
  • Parsley for garnish

Instructions

  1. Cook Pasta: Boil fettuccine until al dente, then drain.
  2. Cook Chicken: Season and pan-sear chicken until golden, then shred.
  3. Make Alfredo Sauce: Cook garlic, add wine, broth, cream, parmesan, and sun-dried tomatoes. Simmer until thickened.
  4. Toss: Combine spinach, chicken, and pasta with sauce until coated.
  5. Serve: Top with beef, parmesan, and parsley.

Notes

  • Pasta – any type works, but flat pasta is best.
  • Cream – use full-fat for richness; add pasta water to adjust thickness.
  • Parmesan – finely shredded for easy melting.
  • Sun-Dried Tomato – in oil or oil-free, both work well.
  • Leftovers – refrigerate for up to 3 days, reheat with a splash of water.
