Ingredients

Chicken

  • 2 tbsp olive oil (Costabile Brand)
  • 1 1/2 lb Springer Mountain Farms chicken breast
  • 1 1/2 tsp paprika (OliveNation)
  • 1 1/2 tsp oregano
  • 1 tsp garlic powder (OliveNation)
  • 1/2 tsp thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt

Pasta

  • 12 oz gluten free farfalle pasta

Sauce

  • 4 tbsp butter
  • 2 tsp dry shallots
  • 1 tsp garlic powder
  • 2 tsp Italian seasoning
  • 1/2 cup chicken broth
  • 2 tbsp Gluten Free 1:1 Flour
  • 3 cups heavy cream
  • 12 oz shredded parmesan cheese
  • 1/4 cup pasta water (reserved from cooking pasta)
  • 1/2 tsp salt

Instructions

  1. Boil the pasta: In a large pot, bring salted water to a boil and cook the gluten free farfalle pasta according to package directions until al dente. Reserve 1/4 cup pasta water before draining.
  2. Prepare chicken seasoning: In a small bowl, combine paprika, oregano, garlic powder, thyme, salt, and black pepper to create the chicken seasoning blend.
  3. Pound the chicken: Lightly pound the chicken breasts to slightly thin them for even cooking.
  4. Season the chicken: Season both sides of the chicken breasts evenly with the prepared chicken seasoning.
  5. Sear the chicken: Heat olive oil in a large skillet over medium heat. Once hot, sear the chicken breasts for 5 minutes on each side until golden brown.
  6. Cook chicken covered: After searing both sides, reduce heat to medium-low, cover the pan with a lid, and cook the chicken for an additional 10-12 minutes until the internal temperature reaches 165°F (74°C).
  7. Rest and slice chicken: Remove the chicken from the pan and transfer to a cutting board to rest, then slice into strips.
  8. Melt butter and sauté seasonings: In the same skillet, melt the butter over medium heat. Add dry shallots, garlic powder, and Italian seasoning, stirring and simmering for about one minute to release flavors.
  9. Make roux: Stir in the gluten free flour, mixing well and scraping up any browned bits from the pan bottom.
  10. Add liquids: Pour in the chicken broth and heavy cream. Whisk continuously until the sauce becomes smooth and creamy.
  11. Incorporate cheese: Add shredded Parmesan cheese to the sauce and stir until fully melted and combined.
  12. Simmer for consistency: Allow the sauce to cook on low heat, stirring occasionally, until it reaches your desired thickness.
  13. Toss pasta in sauce: Add the cooked pasta to the sauce and toss well to ensure every piece is evenly coated.
  14. Adjust sauce consistency: Add reserved pasta water gradually, one tablespoon at a time, to thin the sauce if needed.
  15. Add sliced chicken: Gently stir in the sliced chicken breast, combining everything carefully.
