Homemade Fajita Seasoning

  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp dried oregano
  • 0.25 tsp cayenne pepper (adjust to taste)
  • Salt and black pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and lightly grease a 9×13 baking dish to prevent sticking.
  2. Marinate Chicken: In a bowl, combine the chicken strips with olive oil, lime juice, and the homemade fajita seasoning. Let this mixture marinate for at least 10–15 minutes to infuse flavors.
  3. Prepare Vegetables: Add the sliced bell peppers and onion to the marinated chicken mixture and toss everything to coat evenly with the seasoning and oil.
  4. Layer Ingredients: In the baking dish, layer half of the chicken and vegetable mixture. Spread half of the drained diced tomatoes over it, then sprinkle 1 cup of shredded cheese. Repeat this layering with the remaining chicken mix, diced tomatoes, and cheese.
  5. Bake Covered: Cover the dish with foil and bake in the preheated oven for 20 minutes to cook the chicken and soften the vegetables.
  6. Bake Uncovered: Remove the foil and bake for an additional 10–15 minutes until the cheese is melted, bubbly, and golden brown.
  7. Optional Broil: For extra browning, broil the casserole for 2–3 minutes at the end, keeping a close eye to prevent burning.
  8. Garnish and Serve: Remove from oven, garnish with chopped fresh cilantro, and serve hot with warm tortillas or rice for a complete meal.
