Soft and chewy peanut butter cookies that are easy to make in about 30 minutes! These classic cookies are full of peanut butter flavor and sprinkled with sea salt for the perfect balance of sweet and salty.

Ingredients

Cookie Dough:

  • 1/2 cup unsalted butter, softened
  • 3/4 cup creamy peanut butter
  • 3/4 cup brown sugar
  • 1/4 cup white granulated sugar
  • 1 egg
  • 1 1/2 teaspoons pure vanilla extract
  • 1 1/3 cups unbleached flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • Sea salt (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Soften Butter: Soften butter in the microwave for about 20 seconds. Microwave an additional 5 seconds if needed.
  3. Mix Ingredients: Mix together peanut butter, brown sugar, and white sugar until smooth. Add egg and vanilla.
  4. Add Dry Ingredients: Gradually stir in the flour, baking soda, and baking powder.
  5. Shape Dough: Scoop dough and form into 2-tablespoon-sized balls. Place on the baking sheet, spacing them 2 inches apart.
  6. Create Pattern: Flatten the dough balls slightly with a fork, creating a crisscross pattern on top.
  7. Add Sea Salt: Sprinkle sea salt over the cookies if desired.
  8. Bake: Bake for 9 minutes until slightly under-baked. The cookies will continue to cook as they cool.
  9. Cool: Allow the cookies to cool on the baking sheet for 15 minutes before transferring to a cooling rack.
