These Chewy & Fudgy Purple Ube Brownies are a delightful gluten-free treat that combines the rich flavors of white chocolate and the vibrant, unique taste of ube extract. Perfectly chewy and fudgy with a beautiful purple hue, these brownies are easy to make and bake in just 35 minutes, making them an ideal dessert for any occasion.

Ingredients

Dry & Wet Ingredients

  • 1/2 cup butter (or coconut oil), cut into cubes
  • 8 oz white chocolate (preferably bars, not chips), chopped
  • 1/2 cup granulated sugar
  • 1/2 tsp sea salt
  • 2 tsp ube extract
  • 2 large eggs
  • 1¼ cup gluten free all purpose flour

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper. Grease the exposed sides of the pan to prevent sticking.
  2. Melt Butter and White Chocolate: Place butter cubes and chopped white chocolate in a large mixing bowl. Microwave in 30-second intervals, stirring between each, or melt together using a double boiler until fully melted and smooth.
  3. Add Sugar, Salt, and Ube Extract: Stir in the granulated sugar, sea salt, and ube extract, whisking until combined. The mixture might appear a bit gritty at this stage, but that’s normal.
  4. Incorporate Eggs: Whisk in the eggs until the mixture becomes smooth and cohesive.
  5. Fold in Flour: Gently fold the gluten-free all purpose flour into the batter until just combined. Avoid overmixing to maintain a tender texture.
  6. Pour Batter into Pan: Spread the batter evenly into the prepared baking dish, smoothing the top.
  7. Bake the Brownies: Bake for 25-30 minutes, or until the edges are lightly browned and the center is set but still slightly soft. The center will firm up as the brownies cool.
  8. Cool and Slice: Let the brownies cool in the pan for 5 minutes. Then carefully lift them out using the parchment paper. Cool completely for at least 15 minutes before slicing into 16 squares.

Notes

  • Use bars of white chocolate for better melting results instead of chips.
  • Do not overmix the batter once the flour is added to keep the brownies tender and chewy.
  • Brownies may appear slightly underbaked in the center but will firm up as they cool.
  • You can substitute butter with coconut oil to make the recipe dairy-free.
