Cheesy Scalloped Potatoes is a classic comfort dish featuring thinly sliced russet potatoes layered with sautéed onions and smothered in a creamy, cheesy sauce. Baked to perfection with a golden, crispy topping, this casserole is rich, satisfying, and perfect as a hearty side or main for family meals.

Ingredients

Potatoes and Vegetables

  • 4 russet potatoes, peeled and sliced into ¼-inch slices (about 2 pounds)
  • 1 yellow onion, sliced into rings

Cheese Sauce

  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • ½ teaspoon kosher salt
  • 2 cups whole milk, room temperature
  • 1 ½ cups mild cheddar cheese, shredded
  • Salt and pepper to taste

Instructions

  1. Preheat oven and prepare dish: Preheat your oven to 400°F (200°C). Lightly spray an 8×8-inch casserole dish with nonstick cooking spray to prevent sticking.
  2. Arrange potatoes and onions: In the prepared baking dish, arrange the potato slices and onion rings in layers, alternating between them for an even distribution.
  3. Make the cheese sauce: In a medium saucepan, melt the unsalted butter over medium heat. Whisk in the all-purpose flour and kosher salt, stirring constantly for about one minute to cook the flour.
  4. Add milk and thicken: Slowly whisk in the room-temperature whole milk. Continue cooking and stirring until the mixture thickens to a creamy sauce consistency.
  5. Incorporate cheese: Stir in the shredded mild cheddar cheese all at once. Continue stirring until the cheese has fully melted and the sauce is smooth, about 30 to 60 seconds.
  6. Pour sauce over potatoes: Pour the cheesy sauce evenly over the arranged potatoes and onions. Cover the dish tightly with aluminum foil.
  7. Bake the casserole: Bake covered in the preheated oven for 85 to 90 minutes, or until the potatoes are tender when pierced with a fork.
  8. Broil for crisp topping: Remove the foil and switch your oven setting to broil. Broil the top of the casserole until the cheese layer turns golden brown and crispy, watching carefully to avoid burning.
  9. Season and serve: Season with additional salt and pepper to taste, then serve warm as a comforting side or main dish.

Notes

  • Using room temperature milk helps achieve a smooth sauce without lumps.
  • To save time, you can slice the potatoes thinner or cook them partially before assembling.
  • For variation, try adding garlic powder or fresh herbs like thyme to the cheese sauce.
  • Use mild cheddar cheese or your favorite melting cheese for best results.
  • Covering the dish prevents the top from burning while ensuring the potatoes cook through.
