Cheesy Mashed Potato Puffs are crispy on the outside and creamy on the inside bite-sized treats made from mashed potatoes mixed with cheddar, Parmesan, and chives, perfect as a comforting appetizer or snack.

Ingredients

  • 3 cups chilled mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1 large egg
  • 1/4 cup chopped chives
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • Cooking spray or butter for greasing the muffin pan

Instructions

  1. Preheat your oven to 400°F (200°C). Grease a mini muffin tin with cooking spray or butter.
  2. In a large bowl, combine the chilled mashed potatoes, shredded cheddar cheese, chopped chives, all-purpose flour, garlic powder, salt, and pepper. Add the egg and mix until well combined.
  3. Roll the mixture into 1-inch balls and coat each ball with grated Parmesan cheese.
  4. Place each ball into a muffin cup, gently pressing to form a puff shape.
  5. Bake for 15-20 minutes, or until the edges are golden brown and crispy.
  6. Let the puffs cool slightly before removing them from the tin. Serve warm.

  • Incorporate finely chopped spinach or broccoli for added nutrition.
