Ingredients

Wraps

  • 2 large tortillas, regular or low-carb/high-protein

Chicken Filling

  • 7 oz cooked chicken, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons light mayonnaise
  • 1 tablespoon light Greek yogurt or plain yogurt
  • 2 teaspoons hot sauce (like Frank’s)
  • ¼ teaspoon salt

Additional Ingredients

  • 3 oz cheddar cheese, grated
  • 1 green onion, chopped
  • Olive oil spray

Instructions

  1. Prepare the chicken mixture: In a bowl, combine the chopped cooked chicken, minced garlic, light mayonnaise, light Greek yogurt or plain yogurt, hot sauce, and a pinch of salt. Mix thoroughly until well combined.
  2. Assemble the wraps: Lay one tortilla flat on a clean surface. Sprinkle about 2 tablespoons of grated cheddar cheese along the lower third of the tortilla. Spoon approximately ⅔ cup of the prepared chicken mixture over the cheese, then add another tablespoon of grated cheddar cheese and a sprinkle of chopped green onion on top.
  3. Roll the wraps: Fold in the sides of the tortilla to enclose the filling, then roll it up tightly from the bottom to the top, creating a compact wrap.
  4. Heat the pan: Place a non-stick pan over medium-high heat and lightly spray it with olive oil to prevent sticking and aid crisping.
  5. Cook the wraps: Put the wraps seam-side down on the heated pan. Cook for 3 to 4 minutes on each side until the tortillas are golden and crispy. Cover the pan with a lid while cooking to ensure the filling warms through and the cheese melts.
  6. Serve: Remove the wraps from the pan, slice each in half diagonally, and serve hot for the best flavor and texture.

Notes

  • You can use either regular or low-carb/high-protein tortillas depending on your dietary preference.
  • Adjust the amount of hot sauce to suit your preferred spice level.
  • Covering the pan while cooking helps melt the cheese and thoroughly warm the filling.
  • For a crispier wrap, you can add a little more olive oil spray to the pan.
  • Leftover wraps can be stored in the refrigerator and reheated in a skillet or oven for best results.
