Ingredients

  • 2 tablespoons Butter
  • 2 tablespoons Olive oil
  • 1 Yellow Onion
  • 500g Fresh Broccoli, chopped
  • 4 cloves Garlic, minced
  • 2 cups Heavy Cream
  • 8 oz Mozzarella Cheese
  • 8 oz Parmesan Cheese
  • ½ cup Pasta water
  • 16 oz Ditalini Pasta

Equipment:

  • Cutting Board
  • Large Skillet

Instructions

  1. Sauté Aromatics: In a large skillet, melt butter with olive oil over medium heat. Add minced garlic and diced onion, sauté until translucent, about 5-7 minutes. Season with 1 teaspoon of salt.
  2. Cook Broccoli: Stir in chopped broccoli and sauté for another 5 minutes, until tender yet still vibrant green. Add another teaspoon of salt.
  3. Make Creamy Sauce: Pour in heavy cream. Bring to a simmer, then add shredded mozzarella cheese. Stir until smooth. Season with salt and pepper.
  4. Cook Pasta: Cook pasta in a separate pot until al dente. Reserve ½ cup of pasta water, then drain.
  5. Combine and Serve: Add pasta to skillet with broccoli and sauce. Pour in reserved pasta water and toss gently. Sprinkle with parmesan cheese and serve immediately.
