Ingredients

Cheese

  • 2 cups cheddar cheese, grated
  • ½ cup cream cheese
  • ½ cup cheddar cheese (for topping)

Egg Mixture

  • 12 large eggs
  • 12 tbsp butter, melted
  • 1 medium tomato or 2 small tomatoes, chopped
  • ¼ cup onion, chopped
  • ⅛ tsp thyme
  • ¼ tsp dried parsley
  • Salt & black pepper, to taste

Instructions

  1. Prepare the cheese base: Spread 1.5 cups of grated cheddar cheese evenly in an 8″ x 12″ baking dish to form the base layer for the quiche.
  2. Melt the butter: Heat the 12 tablespoons of butter in the microwave until fully melted, ready to be incorporated into the egg mixture.
  3. Combine egg mixture: In a food processor, add the remaining ingredients: eggs, cream cheese, chopped tomatoes, chopped onions, thyme, dried parsley, salt, and black pepper. If a food processor is unavailable, whisk eggs and cream cheese in a bowl, then mix in the tomatoes, onions, and herbs thoroughly.
  4. Incorporate melted butter: While the food processor is running, slowly pour in the melted butter to create a smooth and creamy mixture. If mixing by hand, gradually stir the melted butter into the combined ingredients until fully incorporated.
  5. Assemble the quiche: Pour the egg and cream cheese mixture over the shredded cheddar cheese in the baking dish, ensuring an even layer.
  6. Add the topping: Sprinkle the remaining ½ cup of grated cheddar cheese evenly over the top of the egg mixture to create a cheesy crust.
  7. Bake the quiche: Place the baking dish in a preheated oven at 325°F (163°C) and bake for 45 minutes. The quiche is done when the outer edges are fully set and the center is slightly jiggly.
  8. Cool and serve: Allow the quiche to cool before slicing and serving. This dish can be frozen for later enjoyment.
