Ingredients

  • 2 cups grated zucchini (about 2 medium), excess moisture squeezed out
  • 1 cup breadcrumbs (plain or seasoned)
  • ½ cup grated Parmesan cheese
  • 2 large eggs
  • 2 cloves garlic, minced
  • ¼ cup finely chopped onion
  • 2 tablespoons chopped fresh parsley (or 1 teaspoon dried)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon Italian seasoning (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease with cooking spray or oil.
