Dough

  • 1 tsp cane sugar
  • 2 tsp active dry yeast (or 1 packet)
  • 1 cup warm water (105°-110° F)
  • 1 Tbsp olive oil
  • 1 tsp salt
  • 3 cups all-purpose flour
  • 1 tsp olive oil (for greasing bowl)

Toppings

  • 1 Tbsp neutral oil (or substitute 1 Tbsp water)
  • 2 large portabella mushroom caps, thinly sliced
  • 1 large white or yellow onion, thinly sliced
  • 2 cups fresh spinach, chopped thinly
  • 2 cups shredded mozzarella cheese (vegan cheese optional)
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 Tbsp fresh thyme
  • 1 tsp crushed red pepper (optional)
  • 2 Tbsp dairy-free butter (optional)

Instructions

  1. Activate Yeast: In a small bowl, mix warm water (105°-110° F) and yeast. Set aside until the yeast foams, about 1 minute. Ensure water is not too hot or yeast won’t foam properly.
  2. Make Dough: In a large bowl, combine flour, sugar, and salt. Slowly add the yeast mixture and mix until soft dough forms.
  3. Knead Dough: Knead dough 3-5 minutes forming a ball. Add 1 Tbsp water if dough feels dry.
  4. Let Dough Rise: Place dough in an oiled glass bowl, cover with a kitchen towel, and let it rise in a warm, dark place for 45 minutes to 1 hour until doubled in size.
  5. Caramelize Onions and Mushrooms: Heat a pan on medium heat. Add 1 Tbsp neutral oil, sliced mushrooms, onions, salt, and pepper. Cook 5-7 minutes, stirring, until onions are caramelized. Set aside.
  6. Preheat Oven: Preheat oven to 500°F (260°C).
  7. Prepare Pizza Base: Punch down risen dough and divide into two portions. Roll each portion on a floured surface, leaving thicker edges for crust. Use parchment paper if desired.
  8. Assemble Pizzas: Place rolled dough with parchment on baking pan. Evenly top each with shredded mozzarella and the onion-mushroom mixture.
  9. Bake Pizzas: Bake for 5-7 minutes until cheese melts.
  10. Optional Butter Finish: Remove pizzas, brush crust edges with melted dairy-free butter if using, then bake an additional 2-3 minutes until crusts are golden brown.
  11. Add Fresh Toppings and Serve: Top pizzas with fresh spinach and thyme. Slice and sprinkle crushed red pepper if desired. Serve immediately and enjoy!
