Cajun Chicken Orzo is a one-pot chicken breast recipe that is both flavorful and easy to prepare. This dish is deliciously creamy and comforting, making it a perfect meal for busy weeknights.

Ingredients

Chicken:

  • 3 chicken breasts, cut into small strips
  • 13 tbsp Cajun seasoning
  • 1 tsp salt
  • 1 tbsp olive oil
  • ½ tbsp butter

Orzo:

  • 1 large onion, finely diced
  • 2 cloves garlic, minced
  • 2 tbsp chopped sun-dried tomatoes
  • 1 tbsp tomato paste
  • 1 cup (200g) orzo pasta
  • 1 cup (240ml) chicken broth or stock made with a stock cube
  • 1 cup (30g) shredded spinach
  • ¼ cup (60ml) heavy cream
  • 3 tbsp grated parmesan cheese, plus extra to serve

Instructions

  1. Prep the Chicken: Combine the chicken, Cajun seasoning, and salt. Pan fry the chicken in butter and oil until it starts to color.
  2. Cook the Aromatics: Add onion, garlic, sun-dried tomatoes, and tomato paste. Cook over low heat for five minutes.
  3. Add Orzo and Broth: Stir in orzo, then add chicken broth. Simmer, cover, and cook for about 20 minutes.
  4. Finish the Dish: Test the orzo for doneness, then stir in spinach. Add cream and parmesan. Adjust seasoning and serve.

Notes

  • This creamy Cajun chicken orzo is best enjoyed fresh. Leftovers can be refrigerated for a couple of days. To reheat, add water or broth and simmer, or microwave until hot, stirring halfway.
