Ingredients

Meat and Vegetables

  • 1 tablespoon olive oil
  • 1/2 cup red bell pepper, chopped
  • 1/2 cup sweet onion, chopped
  • 1 pound lean ground beef

Beans and Corn

  • 15 ounce can black beans, rinsed and drained
  • 1 cup corn (preferably frozen fire roasted)

Tomatoes and Chilies

  • 14.5 ounce can diced tomatoes
  • 4 ounce can diced green chiles

Grains and Broth

  • 1 cup jasmine rice, rinsed
  • 2 cups chicken broth

Seasonings and Cheese

  • 1/2 cup salsa
  • 1 tablespoon taco seasoning
  • 1/2 teaspoon chili powder (use 12 teaspoons if more spice desired)
  • 1 cup shredded cheddar/jack cheese
  • Salt and pepper to taste

Instructions

  1. Sauté vegetables and brown beef: Heat olive oil in a large pan over medium heat. Add chopped onions and red bell peppers and sauté until softened. Add the lean ground beef and cook until browned throughout. Drain excess grease. Season with salt and pepper to taste.
  2. Combine ingredients and simmer: Stir in salsa, black beans, corn, diced tomatoes, diced green chiles, rinsed jasmine rice, taco seasoning, and chili powder. Pour in the chicken broth and bring the mixture to a light boil. Cover the pan, reduce heat to low, and simmer for 15 minutes or until the rice is fully cooked and has absorbed most of the liquid.
  3. Add cheese and let melt: Stir the mixture and adjust seasoning as needed. Sprinkle shredded cheddar/jack cheese over the top, cover the pan again, and let it rest for 5 minutes off the heat to allow the cheese to melt thoroughly.
  4. Serve your burrito bowl: Spoon the warm mixture into bowls. Optionally serve over fresh lettuce in a salad bowl and accompany with tortilla chips. Leftover burrito bowl can be deliciously rolled up inside tortillas for next-day meals.
