A flavorful Buffalo Chicken Salad combining shredded rotisserie chicken with a spicy buffalo sauce dressing, creamy mayo and Greek yogurt, and crunchy veggies for a tangy, spicy, and satisfying meal.

Ingredients

3 cups shredded rotisserie chicken

1/2 cup finely chopped celery

3 tablespoons chopped green onion

1/2 cup finely chopped red onion

1/2 cup avocado oil mayonnaise

1/4 cup plain Greek yogurt

1/4 cup buffalo sauce

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon sea salt

Dash of black pepper

Instructions

  1. Finely chop the celery, green onion, and red onion.
  2. Shred the rotisserie chicken.
  3. In a small bowl, combine the avocado oil mayonnaise, plain Greek yogurt, buffalo sauce, garlic powder, onion powder, sea salt, and black pepper. Mix well to create the dressing.
  4. In a large bowl, combine the shredded chicken and chopped vegetables.
  5. Pour the dressing over the chicken and vegetables.
  6. Mix thoroughly until all ingredients are well-coated.
  7. Serve immediately or refrigerate for later use.
