This Crockpot Buffalo Chicken Dip is the ultimate crowd-pleaser, combining tender shredded chicken with creamy cheese, tangy ranch and blue cheese, and spicy buffalo wing sauce. Perfectly slow-cooked to meld all the flavors into a warm, bubbly dip, it’s ideal for game days or casual gatherings served with tortilla chips or celery sticks.

Ingredients

Dip Base

  • 16 oz cream cheese (full fat, softened)
  • 1/2 cup ranch dressing
  • 1/2 cup sour cream (full fat)
  • 1/3 cup blue cheese crumbles (divided)

Main Ingredients

  • 2 cups cooked and shredded chicken (rotisserie chicken recommended)
  • 1/2 cup buffalo wing sauce
  • 2 cups shredded cheddar cheese (divided)

Garnish

  • 3 green onions (sliced)
  • Fresh parsley (minced)
  • Additional blue cheese crumbles

Instructions

  1. Assemble Ingredients: In a mixing bowl, combine the softened cream cheese, ranch dressing, sour cream, 1/4 cup of the blue cheese crumbles, shredded chicken, buffalo wing sauce, and 1 cup of shredded cheddar cheese. Stir thoroughly until all ingredients are well blended.
  2. Prepare Slow Cooker: Lightly spray the inside of a 3-quart slow cooker with non-stick cooking spray to prevent sticking. Transfer the dip mixture into the slow cooker, spreading it evenly.
  3. Add Cheese Topping: Sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the top of the dip mixture in the slow cooker.
  4. Cook the Dip: Cover the slow cooker and set it to LOW heat. Cook for 2 to 3 hours, or until the dip is hot and bubbling throughout.
  5. Garnish and Serve: Once cooked, sprinkle the top with the remaining blue cheese crumbles, sliced green onions, and minced fresh parsley. Serve the dip hot with tortilla chips or celery sticks for dipping.

Notes

  • For best flavor, use full-fat cream cheese and sour cream.
  • Rotisserie chicken adds great flavor and convenience.
  • You can adjust the amount of buffalo wing sauce to make it milder or spicier.
  • To keep the dip warm longer, use the slow cooker’s warm setting after cooking.
  • Consider serving with fresh celery sticks for a low-carb option alongside tortilla chips.
