A fun and whimsical no-bake Bubblegum Cheesecake that’s bursting with bubblegum flavor and adorned with colorful gumballs. This dessert is sure to delight both kids and the young at heart, making it perfect for parties and special occasions.

Ingredients

Graham Crust:

  • 2 cups graham cracker crumbs
  • 6 tablespoons melted butter

Cheesecake Filling:

  • 32 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1/3 cup sugar
  • 1/3 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup gumballs
  • Neon pink food coloring

Frosting:

  • Frosting ingredients as listed

Instructions

  1. Graham Crust: Mix graham crumbs, sugar, and butter. Press into a springform pan and freeze.
  2. Cheesecake Filling: Blend cream cheese, sugars, cream, and vanilla until smooth. Add pink coloring. Fold in gumballs, pour into the crust. Freeze overnight.
  3. Frosting: Beat butter, cream cheese, vanilla, cream, and powdered sugar. Color pink. Pipe frosting onto the cake and decorate with gumballs.
