Ingredients

For the Bruschetta:

  • 4 Roma tomatoes, diced
  • ¼ cup basil leaves, chopped
  • 1 garlic clove, minced
  • 1 tablespoon extra virgin olive oil
  • 12 teaspoons balsamic vinegar
  • Salt, to taste

For the Cheese Mixture:

  • 8 oz feta cheese, crumbled
  • ½ block cream cheese (4 oz), softened
  • ½ cup sour cream
  • 1 garlic clove, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • Salt, to taste
  • For Garnishing:

    • More basil leaves, chopped
    • Red pepper flakes
    • Parmesan cheese, freshly grated

Instructions

  1. Preparing the Bruschetta: Core and dice Roma tomatoes. Combine tomatoes, basil, garlic, olive oil, vinegar, and salt. Marinate for 10 minutes.
  2. Preparing the Cheese Mixture: Blend feta, cream cheese, sour cream, garlic, lemon juice, and olive oil until smooth. Adjust salt.
  3. Assembling the Dip: Spread cheese mixture in a dish. Top with marinated bruschetta. Garnish with basil, red pepper flakes, and Parmesan.
