Ingredients

Dry Ingredients

  • 3/4 cup (98g) all-purpose flour (measured properly)
  • 1/2 cup (57g) natural unsweetened cocoa powder
  • 1/4 tsp baking powder
  • 1/4 tsp salt

Wet Ingredients

  • 1/2 cup unsalted butter, melted
  • 1/4 cup vegetable oil
  • 1 1/2 cups (310g) sugar
  • 1 1/2 tsp vanilla extract
  • 2 large eggs

Instructions

  1. Preheat the oven: Set your oven to 350°F (180°C) and lightly grease a mini muffin pan with non-stick baking spray to prepare for baking.
  2. Mix dry ingredients: In a medium-sized bowl, whisk together the all-purpose flour, natural unsweetened cocoa powder, baking powder, and salt until evenly combined. Set aside.
  3. Combine wet ingredients: In a large mixing bowl, mix the melted unsalted butter, vegetable oil, sugar, and vanilla extract until well incorporated and smooth.
  4. Add eggs: Crack in the two large eggs and mix thoroughly until the batter is uniform and smooth.
  5. Incorporate dry ingredients: Add the dry ingredient mixture to the wet ingredients and mix until well combined, being careful not to overmix to maintain a tender texture.
  6. Fill muffin cups: Spoon approximately 1 ½ tablespoons (23 grams) of the brownie batter into each mini muffin cup, filling evenly.
  7. Bake: Place the pan in the oven and bake for 10-15 minutes, with 12 minutes being ideal, or until the centers appear just set.
  8. Cool: Allow the brownie bites to cool in the pan for 3-5 minutes before transferring them to a cooling rack to cool completely.
  9. Store: Keep the brownie bites in an airtight container at room temperature for up to 4-5 days for best freshness.
