Ingredients

Brownie Batter

  • 3/4 cup all purpose flour
  • 1/2 tsp baking powder
  • 2 large eggs
  • 3/4 cup sugar
  • 1/4 cup brown sugar
  • 1/4 cup oil
  • 1 tsp vanilla extract
  • 2/3 cup dark chocolate, chopped (chocolate of preference)
  • 4 tbsp butter, melted
  • 3 tbsp cocoa powder

Frosting

  • 1/3 cup semisweet chocolate
  • 4 tbsp butter, softened
  • 1/2 cup powdered sugar
  • Sprinkles for decoration

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the brownie batter.
  2. Prepare Chocolate Mixture: In a small saucepan, melt the 4 tablespoons of butter. Once melted, pour over the chopped dark chocolate and stir until smooth. Then, add the 3 tablespoons of cocoa powder and mix thoroughly.
  3. Mix Wet Ingredients: In a large mixing bowl, whisk together the 2 large eggs, sugar, brown sugar, oil, and vanilla extract until well combined.
  4. Combine Chocolate and Wet Ingredients: Allow the melted chocolate and butter mixture to cool slightly, then add it into the egg mixture. Gently mix until just combined to form the brownie base.
  5. Add Dry Ingredients: Fold in the all purpose flour and baking powder mixture carefully just until there are no visible flour clumps, ensuring not to overmix.
  6. Bake the Brownie: Pour the brownie batter into a parchment-lined 8×8-inch baking pan. Bake for 18-20 minutes. Insert a toothpick into the center; it should be coated with wet crumbs and not come out completely clean.
  7. Cool the Brownie: Remove the brownie from the oven and allow it to cool completely in the pan before applying frosting.
  8. Prepare Frosting: Melt the semisweet chocolate and set aside to cool. Then beat the softened butter until fluffy. Gradually add the powdered sugar and the cooled melted chocolate, mixing until smooth and creamy.
  9. Frost and Decorate: Once the brownie has cooled, spread the prepared frosting evenly over the top. Sprinkle with colorful sprinkles for a festive look.
  10. Serve: Cut into bars and enjoy these rich, fudgy brownie birthday cake bars with your friends and family!

Notes

  • Ensure the chocolate butter mixture has cooled before adding to eggs to prevent scrambling.
  • Do not overbake the brownies; they should be slightly underdone for a fudgy texture.
  • Parchment lining the baking pan helps in easy removal and clean edges.
  • For a more intense chocolate flavor, use a high-quality dark chocolate.
  • Sprinkles add a festive touch but can be omitted or substituted with nuts if desired.
