Instructions

  1. Marinate the Chicken: In a bowl, whisk together the brown sugar, soy sauce, minced garlic, grated ginger, lime juice, and olive oil. Place the chicken breasts or thighs in a shallow dish or resealable bag, and pour the marinade over the chicken, turning to coat all sides. Cover and let marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more intense flavor.
  2. Cook the Chicken: Choose your preferred method:
    • Grilling: Preheat your grill to medium-high heat. Grill the chicken for 6-8 minutes per side, basting occasionally with the leftover marinade. Add the pineapple chunks or slices to the grill during the last few minutes for a smoky, caramelized finish.
