Ingredients

Crust Dough

  • 1 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 3/4 cup confectioners’ sugar
  • 2 tsp pure vanilla extract
  • Pinch of salt
  • 1 egg
  • 2 1/2 cups all-purpose flour

Filling

  • 1 cup brown sugar, lightly packed
  • 1 Tbsp ground cinnamon
  • 2 Tbsp all-purpose flour
  • 3 Tbsp unsalted butter, melted

Glaze

  • 1 cup confectioners’ sugar
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • 34 Tbsp heavy cream or milk

Instructions

  1. Preheat Oven: Begin by preheating your oven to 325℉ to ensure it reaches the perfect temperature for baking the bars evenly.
  2. Prepare Baking Dish: Line an 8-inch square baking dish with parchment paper, letting the paper overhang on two sides to lift the bars out easily after baking. Lightly spray the parchment with baking spray to prevent sticking.
  3. Make Dough: Using a stand mixer fitted with a paddle attachment, cream the softened butter and brown sugar together until smooth and creamy, about three minutes. Add the egg and mix to combine. Then add confectioners’ sugar, vanilla extract, and salt, beating until just combined, approximately one minute. Be sure to scrape down the bowl sides as needed. Gradually add the flour and mix until just incorporated to form the dough.
  4. Divide Dough: Split the dough into two equal halves. Firmly press one half into the prepared baking dish, spreading it evenly across the base. On a separate piece of parchment, shape the other half into an 8×8 inch square and set aside for later.
  5. Prepare Filling: In a small bowl, combine the brown sugar, cinnamon, and flour. Stir in the melted butter until well blended, creating a spreadable filling mixture.
  6. Assemble Bars: Evenly spread the cinnamon brown sugar filling over the dough pressed in the baking dish. Carefully place the reserved dough square on top of the filling, gently pressing down to seal the layers.
  7. Bake: Place the baking dish in the preheated oven and bake for 30-40 minutes, until the bars are light golden brown and the dough feels set to the touch. Remove from oven and allow to cool completely in the pan.
  8. Make Glaze: While the bars cool, whisk together the confectioners’ sugar, cinnamon, vanilla extract, salt, and heavy cream or milk until smooth and pourable.
  9. Glaze Bars: Using the parchment overhang, lift the cooled bars out of the pan. Drizzle the cinnamon glaze over the bars and use an offset spatula to spread it evenly across the surface.
  10. Serve: Allow the glaze to set for a few minutes, then cut the dessert into squares. Serve and enjoy the sweet, cinnamon-flavored pop tart bars.

Notes

  • Ensure the dough halves are chilled slightly if too soft to handle easily for the top layer.
  • Use parchment paper overhang to lift bars cleanly out of the pan without breaking.
  • You can substitute milk for heavy cream in the glaze to reduce richness.
  • Store leftover bars in an airtight container at room temperature for up to 3 days.
  • Allow bars to cool completely before glazing to prevent the glaze from melting and sliding off.
