These Brisket Nachos are a delicious and hearty appetizer or snack, combining crispy corn tortilla chips layered with tender shredded brisket, fresh vegetables, pinto beans, and melted cheese. Baked to perfection, they offer a wonderful blend of smoky, savory, and fresh flavors, garnished with creamy avocado, cilantro, and lime for an irresistible treat perfect for sharing.

Ingredients

Base

  • 4 ounces corn tortilla chips

Brisket and Beans

  • 1 cup leftover cooked shredded brisket
  • 1/2 cup pinto beans

Vegetables

  • 1 corn cob, kernels cut off (or 1 cup canned/frozen corn kernels)
  • 1/2 small red onion, diced
  • 1 jalapeño pepper, thinly sliced
  • 2 green onions, chopped
  • 1 large tomato, chopped

Cheese and Sauce

  • 3 ounces shredded cheese
  • 1/4 cup BBQ sauce

Garnishes

  • Chopped fresh cilantro
  • Sliced avocado
  • Lime wedges

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to get it ready for melting the cheese and warming all the ingredients thoroughly.
  2. Prepare the Base Layer: Place half of the corn tortilla chips in a cast iron skillet or a small foil-lined baking sheet, evenly spreading them out to form the first layer of the nachos.
  3. Layer Ingredients: Evenly distribute half of the shredded brisket, corn kernels, diced red onion, sliced jalapeño, chopped green onions, pinto beans, chopped tomato, BBQ sauce, and shredded cheese on top of the chips. Then, repeat the layering process with the remaining chips and other ingredients to create a second layer.
  4. Bake: Place the assembled nachos into the preheated oven and bake for 5 to 10 minutes. Bake just until the cheese melts and becomes bubbly, enhancing the flavors and binding the toppings to the chips.
  5. Garnish and Serve: Remove the nachos from the oven and garnish with chopped fresh cilantro, sliced avocado, and lime wedges. Serve immediately with additional BBQ sauce or sour cream as desired to enhance the taste and texture.
