This Bobby Flay-inspired chicken thigh recipe is marinated in bold spices and herbs, delivering a juicy and flavorful dish perfect for any meal.

Ingredients

Bone-in, skin-on chicken thighs

Olive oil

Garlic (minced)

Fresh thyme (chopped)

Fresh rosemary (chopped)

Paprika

Ground cumin

Ground coriander

Salt and pepper

Lemon (zested and juiced)

Red pepper flakes (optional)

Instructions

  1. In a bowl, combine olive oil, minced garlic, chopped thyme, rosemary, paprika, cumin, coriander, salt, pepper, lemon zest, lemon juice, and red pepper flakes (if using). Stir until well blended.
  2. Pat the chicken thighs dry with paper towels. Rub the marinade all over the chicken thighs, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes.
  3. Preheat your grill or oven. For grilling, heat to medium-high and cook skin-side down for 6-7 minutes. Flip and cook for another 6-7 minutes until the internal temperature reaches 165°F.
  4. If baking, preheat your oven to 400°F and bake for 30-35 minutes or until fully cooked.
  5. Once cooked, allow the chicken to rest for 5 minutes before serving.

Notes

  • For spicy chicken thighs, add extra red pepper flakes or chili powder to the marinade.
  • Experiment with different herbs like oregano, basil, or parsley.
  • Use orange or lime juice and zest for a citrusy twist instead of lemon.
  • Store leftovers in an airtight container for up to 3-4 days.
  • Reheat in the oven at 350°F for 10-15 minutes or in a skillet for a crispy finish.
