Ingredients

Buttercream

  • 720 grams powdered sugar (6 cups)
  • 170 grams unsalted butter, softened (¾ cup)
  • 54 grams blueberry flavor paste (3 tbsp)
  • 45 grams whole milk (3 tbsp)
  • 1 gram salt (½ teaspoon)
  • 720 grams powdered sugar (6 cups)
  • 170 grams unsalted butter, softened (¾ cup)
  • 54 grams blueberry flavor paste (3 tbsp)
  • 45 grams whole milk (3 tbsp)
  • 1 gram salt (½ teaspoon)

Chocolate Coating

  • Melted chocolate for dipping (quantity as needed)

Instructions

  1. Prepare Pan: Line an 8 x 6 quarter sheet pan with parchment paper to ensure easy removal of the buttercream layer after chilling.
  2. Beat Butter: In a large mixing bowl, beat the softened butter until smooth and creamy, creating a fluffy base for the buttercream.
  3. Add Powdered Sugar: Gradually add powdered sugar to the butter, mixing well after each addition to incorporate and achieve the right texture.
  4. Mix Flavor & Salt: Stir in the blueberry flavor paste and salt, evenly distributing the blueberry taste throughout the mixture.
  5. Add Milk & Blend: Pour in 3 tablespoons of whole milk and continue mixing until the buttercream is smooth, creamy, and spreadable consistency is achieved.
  6. Chill Buttercream: Spread the buttercream evenly into the prepared pan. Chill for 15 to 20 minutes to firm up before cutting.
  7. Cut & Dry: Cut the chilled buttercream into 1-inch squares. Place the squares on a parchment-lined tray and allow them to dry for 12 to 24 hours to set properly before chocolate dipping.
  8. Dip in Chocolate: Dip each buttercream square into melted chocolate, coating them fully. Allow the chocolate to set before serving or storing.

Notes

  • Ensure the butter is softened but not melted for proper buttercream texture.
  • Allow the squares to dry for at least 12 hours before dipping to prevent melting or excessive moisture.
  • You can use white or dark chocolate for dipping based on preference.
  • Store finished chocolates in a cool, dry place or refrigerated for best freshness.
  • The blueberry flavor paste provides a strong concentrated taste; adjust quantity to suit taste preferences.
