These Bird’s Nest Cookies are a delightful no-bake treat perfect for spring celebrations or Easter. Crunchy chow mein noodles coated in melted chocolate and peanut butter cups create the perfect base for these nest-shaped cookies, adorned with colorful Cadbury speckled eggs on top. Quick and easy to prepare, they are sure to impress kids and adults alike.

Ingredients

Chocolate Mixture

  • 1 cup chocolate chips
  • 2/3 cup Reese’s peanut butter cups

Base

  • 1 5-ounce can chow mein noodles

Topping

  • 1 cup Cadbury speckled eggs

Instructions

  1. Prepare the baking sheet: Line a large sheet pan with parchment paper to create a non-stick surface for forming the cookies.
  2. Melt the chocolate and peanut butter cups: Place the chocolate chips and Reese’s peanut butter cups into a microwave-safe bowl. Microwave on high for 1 minute, then stir the mixture. Continue microwaving in 10-second intervals, stirring well between each, until the mixture is completely melted and smooth.
  3. Combine with chow mein noodles: Pour the chow mein noodles into the melted chocolate mixture and fold gently until all the noodles are thoroughly coated.
  4. Form the nests: Using a spoon, drop portions of the mixture onto the prepared sheet pan. Shape each portion by pressing down slightly and forming a nest shape with a small indentation in the center.
  5. Add candy eggs and set: Press 2 to 3 Cadbury speckled eggs gently into the center of each nest. Allow the nests to stand at room temperature until firm, or refrigerate for about 10 minutes to speed up the setting process. Once firm, store the cookies in a tightly covered container.
