Ingredients

Dressing

  • 1 cup mayonnaise
  • 2 tablespoons sweet pickle relish
  • 2 tablespoons granulated sugar
  • 1 tablespoon dijon mustard
  • 1 ½ tablespoons apple cider vinegar
  • 1 teaspoon salt, plus additional for boiling the pasta
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper

Macaroni Salad

  • 12 ounces elbow macaroni noodles
  • ½ cup red bell pepper, diced
  • ½ cup celery, sliced
  • ⅓ cup red onion, diced
  • ¼ cup carrot, shredded
  • 1 large hard-boiled egg, chopped

Instructions

  1. Dressing: In a bowl, whisk together mayonnaise, sweet pickle relish, sugar, mustard, vinegar, salt, garlic powder, and pepper.
  2. Cook Pasta: Boil macaroni until al dente, then rinse with cold water.
  3. Combine: Mix noodles, bell pepper, celery, onion, carrot, and egg in a bowl.
  4. Add Dressing: Pour the dressing over the salad and toss gently to coat.
