Ingredients

Butter Mint Dough

  • 1/2 cup butter (equivalent to 1 stick, softened)
  • 4 cups powdered sugar
  • 1 tablespoon half and half
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon peppermint oil
  • Dash of salt
  • 2 drops yellow food coloring

Instructions

  1. Beat the Butter: Add the softened butter to a stand mixer and beat well on medium speed until smooth and creamy.
  2. Add Dry Ingredients and Flavorings: Gradually add powdered sugar, half and half, vanilla extract, peppermint oil, and a dash of salt to the butter. Beat the mixture on low speed until the texture becomes dry and crumbly.
  3. Adjust Dough Moisture: If the mixture absorbs the half and half too quickly and remains too dry, add a tiny bit more half and half carefully to avoid over-wetting the dough.
  4. Color and Mix: Add 2 drops of yellow food coloring. Increase the mixer speed to high and beat until a smooth, cohesive dough forms.
  5. Prepare Work Surface: Sprinkle powdered sugar onto a flat surface to prevent sticking.
  6. Remove Dough from Bowl: Transfer the dough from the mixing bowl onto the sugared surface.
  7. Portion the Dough: Take a small, palm-sized amount of the mint dough for shaping.
  8. Keep Dough Moist: Cover the remaining dough with a damp paper towel to prevent it from drying out while you work.
  9. Shape the Mints: Roll the dough into a long snake shape about 1/2 inch thick on the powdered sugar-dusted surface. Using a sharp knife, cut the dough into bite-sized mini shapes. Transfer the cut mints onto a baking sheet using a rubber spatula.
