Meat

  • 1 pound flank steak

Vegetables

  • 34 cups broccoli florets
  • 4 cloves garlic, minced
  • 1 teaspoon grated fresh ginger

Sauce

  • 1/2 cup low-sodium soy sauce
  • 1/2 cup water
  • 1/2 teaspoon apple cider vinegar
  • 1/2 teaspoon toasted sesame oil
  • 1/4 cup packed brown sugar
  • 3 tablespoons cornstarch
  • 1/4 teaspoon crushed red pepper flakes (or more to taste)

  • 2 tablespoons olive oil (divided)

Instructions

  1. Prep Ingredients: Trim any fat from the flank steak and slice it thinly across the grain into bite-sized pieces. In a bowl, whisk together soy sauce, water, apple cider vinegar, toasted sesame oil, brown sugar, cornstarch, grated ginger, minced garlic, and crushed red pepper flakes to create the sauce.
  2. Heat Pan and Cook Broccoli: Add 1 tablespoon of olive oil to a large skillet and heat it over high heat until shimmering. Add the broccoli florets and cook for 4-5 minutes while stirring frequently until they are tender-crisp. Remove broccoli from the skillet and set aside on a plate.
  3. Cook Beef: Add the remaining 1 tablespoon of olive oil to the hot skillet. Spread the sliced beef in a single layer and let it cook undisturbed for about 1 minute. Flip or stir with tongs and cook for another minute, keeping the beef slightly rare to prevent toughening.
  4. Combine and Thicken Sauce: Return the broccoli to the skillet, pour in the prepared sauce, and stir well to coat everything evenly. Cook for 1-3 minutes until the sauce thickens and coats the beef and broccoli nicely.
  5. Serve: Remove the skillet from heat and serve the beef and broccoli immediately for best taste and texture.
