Ingredients

Protein and Rice

  • 3 cups cold cooked jasmine rice
  • 1 pound boneless skinless chicken breast, diced
  • 2 large eggs

Vegetables

  • 1 cup frozen peas and diced carrots
  • 2 green onions, sliced

Sauce and Oil

  • 2 tablespoons vegetable oil, divided
  • 1/3 cup mayonnaise
  • 1/4 cup Thai sweet chili sauce
  • 1 tablespoon sriracha (more to taste)
  • 1 tablespoon soy sauce

Instructions

  1. Cook the chicken: Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the diced chicken breast and cook until golden brown and fully cooked through, about 6-8 minutes. Remove the chicken from the pan and set aside.
  2. Scramble the eggs: Crack the eggs into the same skillet and scramble gently over medium heat until just set, about 1-2 minutes. Remove the eggs and combine with the cooked chicken.
  3. Sauté vegetables: Add the remaining 1 tablespoon of vegetable oil to the skillet. Sauté the frozen peas and diced carrots until they are just tender, about 3-4 minutes.
  4. Add the rice: Add the cold jasmine rice to the skillet with the vegetables. Break up any clumps and let the rice crisp slightly by cooking undisturbed for 2-3 minutes, stirring occasionally to prevent burning.
  5. Combine chicken and eggs: Return the cooked chicken and scrambled eggs to the pan, mixing well with the rice and vegetables.
  6. Prepare the sauce: In a small bowl, whisk together mayonnaise, Thai sweet chili sauce, sriracha, and soy sauce until smooth and well combined.
  7. Toss with sauce: Pour the sauce mixture over the rice, chicken, and vegetables in the skillet. Stir thoroughly to evenly coat all the ingredients and heat through, about 2-3 minutes.
