These Banana Pancake Bites are a quick and delightful breakfast or snack option featuring ripe bananas coated in a lightly spiced pancake batter and pan-fried to golden perfection. Perfectly bite-sized and bursting with banana flavor, they’re easy to make and fun to eat.

Ingredients

Banana Pancake Batter

  • 2 medium ripe bananas
  • 1 egg
  • ¼ tsp ground cinnamon
  • ⅛ tsp vanilla extract
  • ½ tsp baking powder
  • ¼ cup all purpose flour

For Cooking

  • Butter or oil (to grease pan)

Instructions

  1. Preheat the pan: Heat a pan over medium-low heat to prepare for cooking the pancake bites without burning them.
  2. Make the batter: Blend one ripe banana, the egg, ground cinnamon, baking powder, and vanilla extract together until you achieve a smooth, uniform mixture.
  3. Add flour: Transfer the blended mixture to a bowl and stir in the all-purpose flour until the batter is smooth and well combined.
  4. Prepare banana slices: Slice the second banana into thin, coin-shaped pieces. Dip each slice thoroughly into the pancake batter, making sure every side is coated evenly.
  5. Cook the bites: Grease the preheated pan with butter or oil, then place the coated banana slices in the pan. Cook until bubbles start to form on the surface, then carefully flip each bite and cook for an additional couple of minutes until golden brown on both sides.

Notes

  • Use ripe bananas for natural sweetness and better flavor.
  • Keep the pan on medium-low heat to avoid burning the pancake bites.
  • These bites are best served immediately while warm and tender.
  • You can substitute all-purpose flour with a gluten-free flour blend if needed.
  • Add a pinch of nutmeg or a splash of maple syrup for extra flavor variation.
