Ingredients

Bread Pudding:

  • 1 16 oz loaf French bread, cut into 12” cubes
  • 4 eggs
  • 1 cup heavy cream
  • 1 1/2 cups milk
  • 1 14 oz can sweetened condensed milk
  • 1 cup brown sugar
  • 1 Tbs vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • 1/2 tsp salt
  • 4 ripe bananas, mashed
  • 1 1/4 cups chopped walnuts, divided

Caramel Sauce:

  • 1/2 cup brown sugar
  • 3 Tbs butter
  • 1/2 tsp vanilla extract
  • Splash of milk

Instructions

  1. Preheat oven to 350°F (175°C). Place cubed bread in a large bowl.
  2. In another bowl, whisk together eggs, cream, milk, sweetened condensed milk, brown sugar, vanilla, cinnamon, nutmeg, allspice, and salt.
  3. Stir in mashed bananas and 1 cup chopped walnuts.
  4. Pour mixture over bread cubes, stir to coat, and let sit for 20 minutes.
  5. Spray a 9″x13″ baking dish with non-stick spray.
  6. Spread soaked bread into the baking dish, sprinkle with remaining walnuts, and bake for about 1 hour.
  7. For the sauce, combine brown sugar, butter, vanilla, and milk in a bowl, then heat until bubbly.
  8. Pour sauce over the pudding, slice, and serve.
