Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Line an 8×8 inch square baking dish with parchment paper and set it aside to ensure easy removal of the baked yogurt later.
  2. Mix Ingredients: In a large bowl, combine the Greek yogurt, eggs, maple syrup, and vanilla extract. Whisk the mixture until it is completely smooth. Then, add the cornstarch and whisk again until fully incorporated for a custard-like consistency.
  3. Add Berries: Gently fold in 1 cup of the berries into the yogurt mixture, stirring carefully to avoid breaking them. Pour this mixture evenly into the prepared baking dish, then sprinkle the remaining 1/2 cup of berries evenly on top for a decorative and flavorful finish.
  4. Bake: Place the baking dish in the oven and bake for approximately 45 minutes, or until the center of the yogurt custard is set and no longer jiggly when gently shaken.
  5. Cool and Serve: Remove from the oven and allow the baked yogurt to cool almost completely before slicing into 9 squares. Enjoy it plain, or drizzle with additional maple syrup for extra sweetness.
