Baked Feta Pasta is a creamy and flavorful pasta dish made by baking feta cheese and tomatoes together, resulting in a rich, savory sauce. Tossed with pasta, it’s a perfect comfort meal that’s easy to prepare.

Ingredients

8 oz pasta (penne, rigatoni, or any pasta of your choice)

1 block (200g) feta cheese

2 cups cherry or grape tomatoes

3 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, arrange the block of feta cheese in the center. Surround the feta with the cherry or grape tomatoes.
  3. Drizzle olive oil over the tomatoes and feta. Sprinkle the minced garlic, dried oregano, salt, and pepper over the top.
  4. Bake in the oven for 25-30 minutes, until the feta has softened and the tomatoes have burst.
  5. While the feta and tomatoes are baking, cook the pasta according to the package instructions. Drain and set aside.
  6. Once the feta and tomatoes are done, remove the baking dish from the oven. Use a spoon or fork to mash the feta and tomatoes together, creating a creamy sauce.
  7. Toss the cooked pasta into the creamy feta mixture and stir until everything is well coated.
  8. Garnish with fresh basil leaves if desired, and serve immediately.

Notes

  • For a vegan version, swap the feta cheese for a plant-based feta or any vegan cheese alternative.
  • Add spinach, arugula, or roasted vegetables like zucchini or bell peppers to enhance the flavor and nutrition.
  • For a spicy twist, sprinkle red pepper flakes before baking.
  • Feel free to experiment with other cheeses like goat cheese or ricotta for a different texture and flavor.
  • Leftovers can be stored in an airtight container in the fridge for up to 3-4 days.
  • Reheat using the microwave or stovetop with a little olive oil or water.
