Baked Feta Eggs with spinach and tomatoes, a delightful Mediterranean breakfast or brunch recipe that combines the richness of feta with the freshness of vegetables and eggs. Perfect for a cozy morning indulgence.

Ingredients

For the Baked Feta:

  • 2 cups cherry or grape tomatoes
  • 1 red bell pepper, diced
  • 1/2 small red onion, diced
  • 3 cloves minced garlic
  • 8 ounces feta cheese
  • 4 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon red pepper flakes

Additional Ingredients:

  • 1 cup chopped baby spinach
  • 4 large eggs
  • Optional for topping – chopped fresh basil or fresh chives

Instructions

  1. Preheat oven to 400 degrees F.
  2. Prepare individual serving dishes: Divide vegetables and feta, drizzle olive oil, sprinkle spice mixture, bake for 25 minutes.
  3. Combine ingredients: Stir, add spinach, create wells, crack eggs into wells.
  4. Bake: Return to oven for 10 minutes, top with fresh herbs.
  5. Serve warm with bread for dipping.

Notes

  • Ramekins should hold at least 10 ounces or more.
  • If using one baking dish, recommend using an 8×8 or 9×11 baking pan.
