Classic Apple Pie a la Mode combines tender, spiced tart apples baked inside a flaky, buttery crust, topped with a scoop of creamy vanilla ice cream for the perfect warm and cold dessert pairing.

Ingredients

Pie Filling

  • 1/2 cup granulated sugar (plus more for the top crust)
  • 1/2 cup packed brown sugar
  • 3 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 6 to 7 cups tart apples, peeled and thinly sliced
  • 1 tablespoon lemon juice

Pie Crust & Topping

  • 2 9-inch pie crusts, thawed (homemade or store-bought)
  • 1 tablespoon butter
  • 1 egg white
  • granulated sugar for sprinkling

  • 1 quart vanilla ice cream

Instructions

  1. Preheat Oven and Prepare Sugar Mixture. Preheat your oven to 375°F (190°C). In a small bowl, combine the granulated sugar, brown sugar, flour, cinnamon, ginger, and nutmeg. Set this sugar and spice mixture aside.
  2. Prepare Apples. In a large bowl, toss the peeled and thinly sliced tart apples with lemon juice to prevent browning. Sprinkle the sugar mixture over the apples and toss again until they are evenly coated with the spices and sugars.
  3. Assemble Bottom Crust and Filling. Place one pie crust into a 9-inch pie pan, trimming any excess dough flush with the edges of the pan. Spoon the apple mixture evenly into the crust and dot the filling with small pieces of butter.
  4. Add Top Crust. Roll out the second pie crust if needed, then place it over the apple filling. Trim the edges to fit, seal the edges by pressing and fluting to create an attractive border, and cut several slits into the top crust to allow steam to escape during baking.
  5. Apply Egg White Wash and Sugar. Beat the egg white until foamy and brush it evenly over the top crust. Sprinkle additional granulated sugar on top for a lightly sweetened, crisp crust finish. Optionally, cover the edges loosely with foil to prevent overbrowning.
  6. Bake the Pie. Bake the pie in the preheated oven for 25 minutes. Remove the foil covering the edges and continue baking for another 20 minutes or until the crust turns golden brown and the filling bubbles through the vents. Then, transfer the pie to a wire rack to cool until warm.
  7. Serve. Slice the warm pie into eight servings. Plate each slice and top with a generous scoop of vanilla ice cream to serve a traditional a la mode dessert.
