Ingredients

Cinnamon Apples

  • 4 small or 3 large red gala apples, diced
  • 1 ½ tablespoons granulated sugar
  • 1 ½ teaspoons ground cinnamon

Crumb Topping

  • 120 g all-purpose flour
  • 200 g dark brown sugar
  • 1 teaspoon ground cinnamon
  • 85 g butter, room temperature

Vanilla Cinnamon Cake

  • 340 g all-purpose flour
  • ½ teaspoon ground cinnamon
  • 2 ¼ teaspoons baking powder
  • ½ teaspoon salt
  • 125 g butter, room temperature
  • 225 g granulated sugar
  • 3 eggs, room temperature
  • 225 g sour cream (14-18%), room temperature
  • 40 g vegetable oil (e.g. canola oil)
  • 1 ½ teaspoons vanilla extract

Maple Glaze

  • 125 g powdered sugar
  • 1 tablespoon maple syrup
  • 1 teaspoon sour cream
  • ½ teaspoon vanilla extract
  • 12 teaspoons water

Instructions

  1. Prepare Cinnamon Apples: Dice the apples into small cubes and toss them with granulated sugar and ground cinnamon. Allow the mixture to sit so the sugar can draw out some liquid from the apples, but avoid adding the liquid to the cake batter later. Set aside.
  2. Make Crumble Topping: Combine the flour, dark brown sugar, ground cinnamon, and softened butter in a bowl. Mix by hand or with a hand mixer until the mixture forms a crumbly texture. Set aside.
  3. Preheat Oven and Prepare Pan: Preheat the oven to 175ºC (350ºF) using conventional bake setting. Grease and line a 23 cm (9-inch) springform pan with parchment paper.
  4. Sift Dry Ingredients: In a bowl, sift together the all-purpose flour, baking powder, ground cinnamon, and salt. Set aside.
  5. Cream Butter and Sugar: Using a stand mixer with paddle attachment or a hand mixer, beat the 125 g butter and 225 g granulated sugar on high speed for 3 minutes until light and fluffy. Scrape down the sides of the bowl.
  6. Add Eggs: One at a time, add the 3 eggs to the butter mixture on low speed, mixing until just combined after each addition.
  7. Incorporate Flour and Wet Ingredients: Add half of the sifted flour mixture on low speed. Then add the sour cream, vegetable oil, and vanilla extract, mixing to combine carefully. Finally, add the remaining flour mixture and mix until just combined. Scrape the bowl with a rubber spatula to ensure all ingredients are incorporated.
  8. Assemble Cake: Spread half of the cake batter evenly into the prepared springform pan. Layer the cinnamon sugar apples evenly on top of the batter. Cover with the remaining cake batter and smooth the top. Sprinkle the crumble topping over the cake evenly.
  9. Bake: Bake the cake in the preheated oven for 1 hour and 5 to 10 minutes, until a toothpick inserted in the center comes out clean and the top is golden brown.
  10. Cool Cake: Remove the cake from the oven and cool on a wire rack for 10 minutes. Carefully run a thin knife along the edge of the springform pan to loosen the cake. Remove the springform and cool cake completely on the rack.
  11. Prepare Maple Glaze: In a small bowl, whisk together powdered sugar, maple syrup, sour cream, vanilla extract, and 1-2 teaspoons water until smooth. Adjust consistency by adding more water or powdered sugar as needed.
  12. Glaze and Serve: Once the cake has chilled and fully cooled, transfer it to a serving dish. Drizzle the maple glaze evenly over the cake and serve.
