Ingredients

Oats Mixture

  • 1/2 cup oats
  • 1/4 tsp baking powder
  • 2 tbsp maple syrup
  • 1/4 cup applesauce
  • 1/4 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/8 tsp nutmeg
  • Dash of salt
  • 1/2 cup dairy free milk (such as almond or oat milk)
  • 1/2 cup grated apple
  • 2.5 tbsp chopped pecans

Caramelized Apple Topping

  • 1/2 apple, chopped into small cubes
  • 1 tbsp chopped pecans
  • 1 tsp coconut oil
  • 1 tsp maple syrup
  • Dash of vanilla extract
  • Dash of cinnamon

Instructions

  1. Create the oats batter: Add the oats, baking powder, maple syrup, applesauce, vanilla, cinnamon, nutmeg, salt, and dairy-free milk to a blender. Blend all ingredients together until smooth and well combined.
  2. Add grated apple and pecans: Grate an apple and measure out 1/2 cup. Fold this grated apple and 2.5 tablespoons of chopped pecans into the blended oat mixture gently by hand—do not blend these in to preserve texture.
  3. Bake the oats: Transfer the batter into an oven-safe ramekin. Bake in a preheated oven at 400°F (200°C) for about 30 minutes. For a firmer, cake-like texture bake longer; for a gooier consistency bake less time.
  4. Prepare the caramelized apple topping: While oats bake, chop 1/2 apple into small cubes. Heat a pan over medium heat and add the chopped apple, 1 tablespoon chopped pecans, coconut oil, maple syrup, vanilla extract, and cinnamon.
  5. Cook the topping: Sauté the apple and pecan mixture for 5 to 7 minutes, stirring frequently to avoid sticking and to allow the fruit to caramelize nicely.
  6. Assemble and serve: Once the oats are baked and ready, top them with the warm caramelized apple and pecans. Serve immediately and enjoy the comforting, spiced flavors.
