Ingredients
Chicken Marinade:
2 lbs. Chicken Thighs, skin-on
1.5 tsp coarse sea salt
½ tsp garlic powder
½ tsp onion powder
¼ tsp white pepper
¼ cup lemon juice (about 1 to 1 ½ whole lemons)
2 tbsp olive oil
Serving:
2 tbsp chopped chives
Sprinkle of Furikake (optional)
Extra lemon wedges on the side (about a quarter to half of one whole lemon)
Instructions
To prep: Debone the chicken thighs, dice them slightly larger than bite sizes, and marinate in a container with the seasonings and lemon juice overnight in the fridge.
To air fry: Spray the air fryer basket with avocado oil, arrange chicken skin-side up in the basket, air fry at 380F (193C) for 18-20 minutes until golden and cooked through.
To serve: Sprinkle with chives and Furikake, serve with lemon wedges on the side. Enjoy hot!
Notes
Consider leaving the skin on for tender chicken.
White pepper gives an Asian flavor; marinate the chicken in the fridge for enhanced flavor.
If using the oven, bake at 425F (218C) for 15 minutes, then broil for 3 minutes until golden.
