Ingredients

Chicken Marinade

  • 1 lb chicken thighs, cut into 2-inch pieces
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp paprika
  • ¼ tsp cayenne pepper
  • ¼ tsp turmeric
  • ½ tsp kosher salt
  • ½ tsp black pepper
  • 1 tbsp avocado oil

Garlic Herb Butter

  • 8 tbsp salted butter
  • 6 cloves garlic, minced
  • 1 tbsp freshly chopped parsley, plus more for garnish
  • 1 tbsp honey

Instructions

  1. Prepare Chicken: Cut the chicken thighs into 2-inch pieces and place them in a small bowl.
  2. Marinate: In a separate small bowl, mix garlic powder, onion powder, paprika, cayenne pepper, turmeric, kosher salt, and black pepper. Add this spice mix and the avocado oil to the chicken pieces. Mix thoroughly to coat the chicken evenly and marinate for 20 minutes.
  3. Assemble Skewers & Air Fry: Thread the marinated chicken pieces tightly onto bamboo skewers. Line the air fryer basket with parchment paper and arrange the skewers on top. Air fry at 400°F for 10 minutes. Flip the skewers and continue air frying at 400°F for an additional 6-8 minutes until the chicken is golden brown and reaches an internal temperature of 165°F.
  4. Make Garlic Herb Butter: In a small saucepan over medium heat, melt the butter. Add the minced garlic and stir for about 30 seconds until fragrant. Stir in the honey and freshly chopped parsley, then turn off the heat.
  5. Finish & Serve: Brush the cooked chicken skewers with the garlic herb butter, garnish with more parsley, and serve hot.
